Fallon & Byrne have a large selection of herbs, can't swear it includes sorrel leaves but they have lots. They'll also order in stuff sometimes if they can get it, spotted them getting in turnip greens a couple of weeks back for someone for Thanksgiving

If they're tricky to get your hands on though you could try asking in any greengrocers, they might be able to order them for you if they don't have them in normally.

Slow Food Ireland have some info on foraging for sorrel leaves but think they might be out of season

Came across this place in Naul that grows sorrel plants for sale

My friend forages for his restaurant, Isabel's on Baggot Street and definitely still has sorrel. He tends to forage out in Wicklow. Himself and a friend run a foraging course but if you contact the nadur collective on twitter ( the name they go by) I'm sure they'll give you some tips about where to find it.

Alternatively, I know the herb company eats of Eden sells packaged large leaf sorrel to the catering industry.
