I try not to eat meat ever day and I am trying to expand my vegan recipes, anyway I want to try a gratin of celeriac, potatoes, and caramelised onions and I was wondering could I use nut cream ( which I am going to make my self ) and make it a vegan dish instead of a vegetarian dish, in other words does nut cream behave…

I'd say you could bake with it no problem. I do a similar gratin with tahini baked brocolli and chickpeas ( recipe at http://naturalfuel.wordpress.com/2013/11/25/creamy-tahini-baked-brocolli-and-chickpeas/ ) and it works well as a a creamy vegan oven bake sauce and a nut cream would have a similar property.
