    No pics because they came out blurry, and well it's a big pot of light brown so not exactly exciting to look at, but today I made a batch of Curry Addict's curry base. It smells and tastes deelicious - I'm just looking forward to making something fancy out of it tomorrow.

    (Too lazy now to start on an actual dinner so I'll probably be dining on a spice burger :P )

    Last night I made Cornish pasties and potato wedges which we had with lots of ketchup.

    Tonight we had Thai takeaway - Pad Prik Haeng, Pad Krapow, Thai corn cakes, satay skewers, chicken wings in Panang sauce..... a feast :)

    Tonight was Jamie Oliver's killer jerk chicken, served with steamed tenderstem broccoli and French beans, and sweet juicy corn on the cob.

    I made a green Thai curry last night and threw in some chorizo as well. Put it all in the slow cooker for 3 hours. Amazing!!!

    last night I had two medium rare burgers :eek::eek: with an avocado, bit of lettuce and Frank's hotsauce in Aldi wholemeal Mediterranean wraps. Quick and tasty. No pic.

    Last night Mr. Merkin made delicious beef bourgignon direct from Larousse, he even made his own bouquet garni so I was mightily impressed. Served with deliciously waxy potatoes from M&S and green beans. Having the remainder of it this evening.

    My sister invited me for dinner; she served up shop-bought lasagne served with potatoes. POTATOES! An entire meal of WTF? I was very disappointed! Luckily I brought enough wine to down an army so I tucked into that :)

    Last night we had some Indian made with chicken,vegetable oil, dried red chillies, lemon juice, cardamon pods, cinnamon sticks, bay leaves, onions, garlic, ginger, chilli powder, turmeric, chopped tomatoes, spinach and coriander.

    Turned out well and plenty left over so some will be coming to work with me tonight.

    My [relative remaining anonymous for legal reasons] does a mean lasagne with floury spuds, brocolli & loads of gravy. It's an *interesting* meal indeed..

    Quite like my mam's lasagne with chips though!

    Last night was supposed to have a home made (ish) 3-in-1 but my oven went to heaven so got chipper chips to go into it. Made an absolute porker of myself

    Dinner last night was tapas in Mimosa in Carlow.

    We had
    - pulled pork with an apple chutney
    - grilled halloumi with balsamic reduction
    - spicy falafels
    - the creamiest, most delicious goat's cheese in the WORLD, served with a slice of apple, balsamic reduction and crispy, crispy bacon bits.

    Well-chilled sauv blanc.

    Toblerone cheesecake with vanilla ice cream for dessert.

    We died and went to heaven.

    Pulled pork in rolls with loads of cheese. Too much cumin in my spice rub, will have to rectify for next time but was still more than enjoyable.

    Sparks' pulled pork here too. I made great big baps with a hint of oregano and served the pork in them still warm from the oven. Delish! It was the first time Her Indoors got to taste it (she was stateside last time I made it) and she's raving about it too.

    Indian for us tonight.

    Chicken pakora, garlic naan bread and Chicken Saag.

    Didn't like the saag at all, it had an odd kind of flavor, definitely wouldn't get it again.

    Friday night was bangers & mustard mash (for once nothing went wrong!)

    It was my dads birthday Saturday so we had them over for dinner, started proceedings off with a simple antipasti board followed buy his favorite, beef stroganoff (that i forgot to take a photo of :o)

    Finished up with a ever so slightly modified version of Ottolenghi’s Chocolate Fudge Cake (Recipe)
    (I swap 100g of the 50% chocolate for 100g of Green and Black’s Mayan Gold Chocolate and add a few drops of regans orange bitters)

    Had Malay Chicken Kurma last night. Atul Kocchar was on Sunday Brunch again and he made this so I thought I'd give it a bash.

    He mentioned that most Malaysians use coconut milk made from coconut powder even though the county actually produces a lot of coconut milk. Sounded like a good idea as you can make as much or as little as you like, and you can make it to whatever consistency you like.

    I picked up some coconut flour from the Asian market but it wasn't the same thing as coconut powder. The stuff that I got was just very fine desiccated coconut so it didn't mix well (at all!) with the water. I just had to use though as I had no regular coconut milk. It still turned out ok. Texture was a bit grainy but but once mixed with the rice it was perfect.

    The overall flavour was beautiful though. Gonna make it again tonight but I'll use a tin of coconut milk.

    Got a bit more time than usual in the kitchen this weekend so tried out a few things....

    Friday: Sliced fillet steak with roasted mushrooms (yum), extra crispy mini roast potatoes (double yum) and mushroom sauce. Really nice.

    Saturday: Slow baked salmon joint (130C, 80 min, lots of butter) with extra crispy mini roast potatoes (yip, them again!) and buttered carrots. Salmon was unbelievably moist and tender!

    Friday: leftover salmon stirred up with pasta, creme fraiche and broccoli.
