    Had a craving for mexican nd didn't use up mince over weekend, so made chilli con carne and then had as burrito bowls (as no burritos!).
    Didn't have rice, so made cauliflower rice for first time - so good!
    Pico de gallo with sweet peppers, gaucamole with loads of chilli, strong cheddar, greek yogurt (as didn't have sour cream).
    In the end, my substitutions were amazing and will stay. Cauliflower rice and burrito bowls is the way to go!

    We had lasagne last night that I made on Sunday. Again, cooked the bol for hours in the slow cooker. I added a Knorr Stock Pot to it this time and I think it added a nice flavour. The best bit was the salad from the garden with a smattering of herbs from the herb garden!

    Last night we had sweet potato mash with spring onion, kale stir fried with red pepper and garlic, beef sausage and pork medallions cooked in well a sauce made up on the spot from things in press :).

    Tonight we will have rib-eye steaks with steamed new potatoes and some vegetables. I will probably make a small amount of whiskey sauce for the steak too.

    Made chilli beef tacos. Forgot to take a pic though.

    I tried Spark's chilli recipe but didn't have the fancier/more obscure ingredients so it was a very much stripped down method.

    Loaded them into flour tortillas with freshly made guacamole* and salsa (added some grated cheese and sour cream too 'cause I was feeling decadent). Tried out Heinz's chipotle hot sauce on them which is very nice, pleasantly surprised by it.

    * unfortunately I misjudged the avocados and they were a day shy of being ripe :(

    A very, very kind, thoughtful and generally lovely person made me a chili for this week because I kept looking at them with mad tomacco eyes going "I have no tiiiiiime" (deadline week)

    I think they forgot to put any chili in though, like none at all. So I have a massive lunchbox of savoury mince with beans that I've been chilli'ing up in a variety of ways, last night with lots of jalapenos and tonight with a heaped spoon of Laoganma Chili Relish w/soya crunchies. Tasty!! Might do sriracha tomorrow

    I've been getting back into cooking this past week, so for tonight we had chicken and bacon, with onions in a rich tomato sauce and egg noodles, with green peppers.

    I'd fun creating my own recipe :) and playing around with different ingredients.

    Yesterday we had pork steak, marinated overnight in honey, and oyster sauce with sesame seeds.

    It was then roasted in the oven and was delicious, tender and melting.

    really enjoying it :)

    Tonight was baked mackerel with boiled potatoes and cauliflower with homemade cheese sauce. Delicious.

    And I prepped up tomorrow nights dinner all ready in the fridge - Spinach and Feta pie served with sticky sausages. Cannot.Wait.

    Thursdays are always a mad dash to get dinner on before I go to class at 7 so now I have a lovely relaxed hour before I go. I might even be able to finish a cuppa for a change!

    Had McDonald's. Cheeseburger, fries and nuggets.

    First time in eight months. Enjoyed it but that's the last time I'll eat that for a while. It's OK as a treat but definitely can't see how people can eat that everyday!

    Hoping to be inspired to cook something delicious tomorrow :)

    Oh wow Merkin, this sounds incredible!

    I have been dying to try new dishes for a while now and I'm a little fussy (hence the name!) about certain things I don't like.
    This sounds right up my street.

    I'm going shopping tomorrow and I'm going to pick up the ingredients for it and I look forward to making it.

    It was ok, the sauce was far too watery so I added cous cous to thicken it. I also had a sweet red pepper that I added for colour. Needed a lot more flavour though.

    The Moroccan carrot and orange salad however was delicious.

    What's red rice?

    I think that one was red cargo rice from the Asian shop.
    You can also get Carmargue red rice - a French red rice.

    They're just varieties of rice - always wholemeal, I think.
    You can also get black rice.

    Chicken goujons. So easy and cheap to make, and 10 times better than anything you'd buy in a shop. Served with roasted baby potatoes.

    Slightly elaborate for a Thursday night but I was in the mood for cooking :D

    Steak cooked with thyme, rosemary & coffee infused butter in a water bath @56°;

    Caramelized pearl barley cooked in a white wine & mushroom stock

    Pureed spinach

    Panco coated egg yoke (still runny inside)

    Red wine and Madeira jus

    Philly steak sandwich in Oscar's in Smithfield, washed down with cold, delicious Tiger beer.

    The steak was gorgeously tender, lovely kick from the horseradish mayo and the ciabatta was fresh and just the right amount of crusty. Really lovely treat. Staff are great too.
