Serves 6, you want 2 portions. Just divide ingredients by 3, or am i missing something?

    40ml cup low-sodium soy sauce
    40ml cup dark brown sugar
    1 tablespoons rice wine vinegar*
    1/2 teaspoon toasted sesame oil*
1/2 inch piece fresh ginger, peeled and sliced*
1⁄4 or less teaspoon crushed red pepper*
380g pork shoulder, trimmed and cut into 2-inch pieces
    100g ounces soba noodles
1 small red bell peppers, thinly sliced
    75g pound snow peas, trimmed
    chopped roasted peanuts, for serving

*I halved these ones for convenience

Maybe your maths was wrong or you used tablespoons instead of teaspoons. You could always follow the recipe exactly then freeze the extra portions for later use. Then again maybe you just didn't like one of the ingredients.

I do it all the time.
There's no reason why it would be different. Obviously with roasts and stuff cooking time can be affected. So you need to know when meat is cooked. But slow cooker should be grand

Would love to but my freezer is tiny so I could freeze one portion every now and then
