Can anyone recommend any wholemeal bread or scone recipe that doesn't require yeast?
I really want to make herby cheese scones or bread.

    Oh and I don't have any buttermilk....do I need it? :(

    Thanks!

    Hi fussyonion!
I make a very simple wholemeal soda bread - no kneading or messing around!
Preheat oven to 150 degrees, grease 2 2 pound loaf tins (I sometimes line the base with a strip of baking paper because my tins are a bit crap; if yours are non-stick don't bother with this!)
Stir together 15 ounces white flour, 7.5 ounces course wholemeal flour, and 2 fistfuls of wheat bran with a good pinch of salt and 1 rounded teaspoon of bread soda. Make a well in the centre, add 1 beaten egg, a good glug of olive or rapeseed oil (probably about a tablespoonful) and a large tub of natural yogurt (full fat or low fat, makes no difference to the finished bread) or up to 1 litre of buttermilk. If you use the yogurt you'll probably need a splash or two of fresh milk to make the dough wet enough. Stir together with a wooden spoon or with your hand - the mixture should be too loose to knead, but not entirely liquid. Bake for 45 minutes to 1 hour til golden brown and hollow when rapped on the base. I turn the loaves upside down in the tins for the last 20 minutes to get a good crust on the base.
I keep meaning to stir some other ingredients through the dough to change things up a bit, will report back whenever I do!
Edit: if you don't have yogurt or buttermilk you can sour fresh milk with a little vinegar or lemon juice, just leave it for 20 or 30 minutes before making the bread to make sure it's sour.

Most scones are yeast free, here is a recipe from a blog I read lately, it doesn't use buttermilk, comes with easy instructions.

As phormium said, most scone recipes use baking powder or bread soda as a rising agent, not yeast.

Here is one recipe to try. if you don't have buttermilk, squeeze half a lemon into ordinary milk and leave it for 10 minutes to curdle a little.
