My company is planning to start using campaigns on Adwords to have some of our videos play on youtube. You know the ones you skip after 5 seconds. So iv watched tutorials and know how to set up a campaign, but I can't figure out when or how they charge you as our account has no credit card details entered? Do they send you a bill afterwards?

Normally you'd need to add a credit card before you put the campaign live.
They then bill you about twice a month - though that might be linked to your spend

You're billed at a threshold - when you hit that threshold, or every 30 days, whichever comes first. Your threshold starts off low (€25), and if you hit the threshold quickly and often, the threshold is increased in increments. You can keep an eye on it yourself to see when you're bumped up, but this is how it works for credit card billing. You can see all activity that you've paid for in the billing section of your account.

Your account won't run without a credit card.
