Veggie chili con carne

    Hi everyone,
    I've been making more and more meat-free versions of the classics...made gorgeous veggie lasagne last week and also a veg shepherds pie (got the recipe from a poster on Boards...delish!). Now want to try a chili con carne. Does anyone have a good recipe for one that fills you up and has a bit of a kick to it?

    I'm not actually vegetarian or vegan but I have cooked this before for vegetarian guests and it's tasty.

    CHILI SIN CARNE

    Ingredients

    1 tablespoon vegetable oil
    1 onion, diced
    100g mushrooms, diced
    2 carrots, peeled and diced
    3 large cloves garlic, crushed
    1 green pepper, diced
    1 red pepper, diced
    2 to 3 stalks celery, diced
    2 teaspoons chilli powder (or more if you like it hot)
    2 (400g) tins peeled whole peeled tomatoes, diced
    1 (400g) tin kidney beans, undrained
    1 (400g) tin sweetcorn, undrained
    3 teaspoons ground cumin
    1 1/2 teaspoons dried oregano
    1 1/2 teaspoons dried basil


    Heat oil in a large saucepan over medium heat.
    Fry onions, carrots and garlic, stirring occasionally until tender.
    Helps to add the garlic a little after the onions and carrots.
    Stir in green and red peppers, celery and chilli powder to taste.
    Cook until vegetables are tender, about 6 minutes.
    Stir in mushrooms and cook for 4 minutes.
    Stir in tomatoes, kidney beans and sweetcorn.
    Season with cumin, oregano and basil.
    Bring to the boil then reduce heat to medium. Cover and simmer for 20 minutes, stirring occasionally.
