At the stage where myself and the OH are going for a mortgage, have savings of about 60k between us and both in full time employment.

I do have one issue however, about 8 years ago i rented in Wexford, moved out but didnt cancel ESB, due to this got hit with a bill for 800 euro (bill ran up by the next tenant unknown to me until 2 yeas later). We spoke to their lawyers about it explained it and the issue was resolved until i reopened an account with them last year. Seeing as they had no record of the issue being resolved, i paid the money to them (something which still really annoys me!!).

Will this "bad debt" which is now paid count against me?

Shouldn't do, but the easy way to check is to get an Irish credit bureau report on yourself, only 6 euro, totally worth it.

If nothing shows up, great. If it does then you have time to get it struck out of your credit rating.

This is what the banks use to get your credit rating.

ESB is not registered with the ICB so unless they took you to court and got a judgement against you it can't touch your credit rating.
