Advice needed: Yellow iris rhizomes storage and planting

Digging up yellow iris rhizomes at present from a marshy field. I plan to plant them in autumn. Would it be OK to store them in buckets of water till then? I don't want them to dry out. Also when planting how small can I chop up the rhizomes? I want to plant 0.25 acres. Thanks
