    Hi I am moving away from Ireland and was wondering does anyone have a recipe for irish breakfast sausages?

    I'm getting all the equipment together myself. Just bought a stuffer. Getting a mincer soon.
    I heard u use 20% fat 30% rusk and 50% pork.?? Not sure if that's very accurate. I want to mimic Denny/Clonakilty....... Season with salt, white pepper and mace........
    What i want to know is where to source the best casings online as I'm in Canada. Is sheep better than hog as it thinner and smaller??And does bread work as well as rusk?? Sorry for hijacking your thread but all the planning I've put in so far these are the questions I have left unanswered!!!
