I'm not looking for a venue with a bar as we want to bring our own food/drink and keep it separate to an actual bar/restaurant.

staycity offer apartments to rent for one night, a quick look shows them to be on a par with a hotel room for the night. Not sure if they have a balcony or not...

You could also try www.airbnb.ie, they offer a range of different apartments- should be something there that will suit.
