Cleaning a ray

    How does one clean out a ray? I heard it's difficult.

    Afaik you cut the wings off as close to the stomach so as not to waste meat.
    And some then hang the wings out to dry. I'm not to sure but curious how it's done now myself

    Just cut the two wings off. Follow the curved bone on either side of the backbone starting at the head and it's fairly easy. Skinning is another matter - good pair of gloves needed and you basically peel the top and bottom layers of skin off - watch out for the spikes.

    BTW - don't eat it fresh - leave the wings in the fridge for a day or two before eating - allows the ammonia to disperse apparently.
