You may want to have a look at the restaurant recommendation sticky thread, but generally I think Iyers has been recommended for that Indian feel or Cafe Paradiso if you're up for something a bit more pricy.

Iyer's won't be open on Saturday night but I'd highly recommend it for casual dining on Friday night or Saturday day time.
Café Parasiso is pricy but much loved.
Quay Co Op is vegy but more a wholesome feed than restaurant food.
House Café in the Opera House does a lot of vegy options, is very good but isn't really a restaurant setting and you'd need to check what would be the best time to go - working around show times.

Can't fail if you eat Italian, plenty choice on any good menu and plenty to choose from around Cork. La Dolce Vita on Probys Quay is quite nice!

Definitely Café Paradiso for something special.

Liberty Grill (surprisingly) has some very good vegetarian/vegan options.
