My mum used to cook beetroot in it. You could smell it down the street when coming home.from school

What I absolutely CANNOT understand is that none of the contestants' meals will be served at their best - ie fresh and still hot.

How does gravy/sauce not congeal, meat not keep cooking, ice-cream/sorbet not melt etc etc?
