hotel break with a 2.5 year old

Hello,
I was curious if any of you had any recommendations of hotels in the country which were good for kids around my daughters age(2.5) while still being luxurious enough for us to unwind?planning a break for the week between Christmas and New years. Most places that have kids clubs won't take under 3's.

We had looked at Amber springs but it's pretty much booked out for over the Christmas period.. We love lyrath but feel it's not the best for a toddler, we also don't mind paying extra for a suite to have a quiet drink together when herself is asleep.

Maybe look at Fota Island. Haven't been with my kids but was without and it was lovely. I remember seeing a playroom and think they had activities etc for kids. You've the wildlife park there too for a visit.

Maybe mount wolseley? We were there with smallies and found them very friendly.

Fota Island is lovely as well, plus the fota gardens, fota wildlife park etc are also on that island.
