Recommend a Christmas cake recipe

    Having lost my favourite recipe I'm looking out for a new one. Ideally a lighter cake that's not too dark and rich. Any recommendations?

    Can't give a link as my computer is a bit sick but if you search the cooking chat thread for 'sunmaid christmas cake' you'll find the recipe I posted last year. It's a gorgeous cake, not super dark but quite rich I suppose. I just soaked mine this afternoon, will bake a couple of days before Christmas :)

    I've made Neven Maguire's cake quite a few times now and it's lovely, I feel you can't really go wrong with Neven, he's our Delia!

    I used a recipe from Gem last year. Went down really well! It's on the back of their Christmas bag of dried fruit. Red bag, €5 and it has all the fruit you need for the cake. Think I still have the recipe somewhere, I can root it out if you like.
