Wine Kit, hydrometer sweet, medium, dry?

On the hydrometer it has sweet, medium or dry does that mean i could stop it at sweet if I wanted a sweeter. How does it work the longer it is left the dryer it is?

All yeast does is eat sugar to produce alcohol and CO2. If you stop the yeast before it eats all the sugar you'll get a sweeter drink.
