The late Fr Gerry Daly had a Christmas food appeal in the redemptorists church. I'm sure the redemptorists are still running it. They used to have a drop off point (an old caravan) in the car park. Try there

Mid West Simon in Steamboat Quay on the Dock Road in Limerick (across from Live 95fm) do a food bank all year round and accept donations. The food bank is open Mondays and Wednesdays from their premises and you can drop food into them anytime Mon-Fri 9.30-5pm
