Sausage Casing

    Hi I am wondering does anyone know where I can get hog casings for both breakfast sausages and also black pudding. I am also wondering where I can get dried pigs blood. I am looking to buy it in the west of Ireland. I found these things online but would rather buy them in Ireland.

    The vast majority of dried pig's blood used here is imported, mostly from Holland I think. Most meat factories here don't normally bother with collecting the blood on the pig line to dry it, as it is a messy job and not really worth their while. Where a butcher wants fresh blood to make black pudding they will usually make an arrangement with a local factory to collect it when they need it.

    So I'd say go ahead and buy it online if you have found a source. They're all commercially reared pigs anyway so the country of origin won't really make any difference for this purpose.

    any decent butcher will order both in for you, mine does. where are you based? alot of butchers don't bother doing their own puddings but plenty of pork specialist suppliers around the country. get to know a good butcher and you can get anything
