I was thinking of using DD-WRT on the ISP router for the purpose of utilising the firewall to control the network. The ISP router is patched into a switch that runs to two other routers (from old contracts) that are used as APs and I also have two UniFi APs on the network.

If I use this firmware on the ISP router will the firewall apply to the other devices on the network?

If its the boundary between all your other equipment and the internet then yes, any rules its configured for will apply to all WAN<->LAN traffic.
