Does anyone know what this method of cooking steak is called?

I remember a few years ago I was on the internet and came across a method of cooking steak, at the time I wasn't interested in trying it because it seemed like a bit of hassle, but I'd like to try it now. Basically, the idea is to put the steak in a plastic bag, boil a pan of water, getting it up to the desired temperature using a thermometer and placing the steak in the bag in the pan. I believe the method could have some French name, but I'm not sure, does anyone know what I'm talking about?

its called sous vide.
theres a bit more to it though, need to suck the air out of the bag and vacuum seal it.
might find some diy alternatives to it on youtube though

No need to use a vacuum sealer, a freezer bag will do it. Have used this method many times and even on stage a good few times too.
