    With green beans.

    Hmm,. those would be pretty fatty (in a yummy way), so I'd go with a contrast of bright green and sharp citrus & garlic to cut through that.

    Lemon and garlic over green beans, or spinach.

    Could go with a chutney / relish flavours if they are more of a snack. Good strong vinegar in with some tomato, peppers, chili.
