I got some pigs feet and was wondering if anyone has a suggestion of something interesting to do with them. Don't fancy the standard crubeens recipes. Thanks

Not sure if youd consider this a standard crubeen recipe, but... After simmering them, cooling them and taking all the fiddly bits out, chop them up, season them then press and chill them. When chilled, cut into squares, brush with dijon mustard, breadcrumb and fry. Serve with salad and sauce gribiche. Its a variant of the way they're done in ste menehauld in france. Delish, also v good with lap of lamb.
Also (and never tried this, I admit) you could prob also do something with them along the lines of a pate or rillettes.

Do them Chinese style, you'll probably never go back to standard boiled crubeens
