In London with work for a few weeks and have been out running a lot. I've got a garmin edge 500. never had a issue in general with accuracy but here it's terrible and randomly jumps all over the place.

Never had an issue in Dublin, Wellington, Chicago and so on. Is it just the height and closeness of buildings in London causing issues or are there any other potential issues semi-unique to here to cause the errors?

I was in Washington recently and for the life of me, I couldn't maintain a good lock when around the tall buildings

It's exactly that, it's called the urban canyon effect.
