    I plan on running a Behringer Xenyx 1204 USB though a dell Inspiron. However I'm not really bothered to buy mixing software so I'm wondering if I can just use audacity

    Yes, I think you can. But Reaper or another free/inexpensive DAW like Ardour would be better.
