    Does anyone know a good tried and tested recipe for Bolognese sauce?

    Sticky on Bolognese has a lot of input.

    Recipes can vary widely so it depends what style you like. I prefer a long, slow simmer so that you can see the base of the pot when you drag a spoon through.

    I stick to the Culinaria Italiana one. It's more a meat sauce than a tomato one which most people make outside Italy. The milk is important in it. No garlic usually but as ever, there's thousands of variations in every kitchen in the region. And serve on tagliatelle.

    That was a great thread, I am particularly interested in adding the cocoa powder, i tried this years ago when making Chilli and it did indeed improve it.
