    Young Irish fella Al Porter has the gift of the gab and no mistake. He’s not so much kissed the Blarney Stone as had it surgically attached. It’s his first Fringe gig and he’s only 22 but he owns the room like a pro twice his age.

    I popped in briefly last night. Of the two minutes of what I saw the Naomi Campbell interview looked painful - reminded me of Mia Farrow or Juliette Binoche interviews... Naomi "it's not a diet" I don't restrict myself.


    The Al Porter I found relatively funny I admit but I do hate that RTE style of how they deal with comedians on the lls - so we'll bring you on for an "interview" and you just go mental on your stand up act.

    I typed it up anyway.

    Meatballs / Kofta
    1kg mince. beef/pork/lamb
    1 2med onions,, very finely chopped
    2 Ginger, garlic, chilli finely chopped.
    3 1tsp chilli powder, cumin, corriander, turmeric. (or 2 curry powder and 1 chilli powder)
    4 2tsp garam masala, 6 Tbsp corriander stalks finely chopped. salt& pepper
    1 Fry onions gently for 10 mins.
    Add 2 and keep frying for 5 more mins.
    Add 3. reduce heat and stir fry for 2 mins. remove to bowl and cool.
    In a large bowl combine everything in stages including 4.
    It's much easier if someone else adds the other stuff while you handle the raw meat.
    Give it a good mix and make 25 to 30 meatballs. Leave them to settle in the fridge for a few hours or overnight.

    It might seem like a lot but there will be enough to feed 6 people or the remains can be kept in the fridge or frozen.

    shopping list.

    I'll put the instructions up tomorrow.

    I normally use minced pork from aldi or lidl 6 or 8 quid for 2x500g
    Lamb or beef can be very fatty.

    Sauce
    Mixture of seeds (optional but better)
    1tsp each of cumin, onion, fenugreek and mustard seeds. not all are necessary.
    or
    If you can get to an asian supplies shop ask for panch pareen or pureen sp? 2 or 3 quid a bag and lasts for ages in a jar. use about 2TBsp of that. Can be fried with onions for any curry.

    4 - 6 med onions
    3 bay leaves
    chillies, 4 garlic 2x thumb sized ginger, all finely chopped
    2tsp each cumin, corriander, turmeric. (or 3 - 4 tsp curry powder)
    1 tin chopped tomatoes
    10 cherry tomatoes halved.
    pint of warm water or stock

    tomato puree or small cup of passata.
    Garam masala or Chat masala
    Fresh coriander
    natural yoghurt

    I accidentally saw him live once, i enjoyed it. He's extremely professional, knows how to work a room. I believe he is "billy barry" trained. He headlined the night and although i'd be more of an alternative comedy fan, i was impressed at his professionalism.

    Considering all the atmosphere had been sucked out of the room by a segment in teen suicide, I thought he did well to get the crowd going again. There'll always be a demand for camp comedy. Didn't know about the Billy Barrie thing, though looking back now he did have that sort of performing arts persona.

    Sorry I took so long. Hope the meat isn't rotten.

    Method.

    Fry the onions in a wok or pan on a high heat for 5 mins in 3 batches to burn off some moisture.
    While the 1st batch are cooking warm some oil in a large frying pan and add the seeds (panch pureen) and bay leaves.
    Add the 1st batch of onions once the seeds start to pop. Add the batches as they cook. Once they are all in the big pan add the chopped garlic, chilli and ginger. These will need to be fried on a low to med heat for 20- 30 mins, just barely sizzling. Keep stirring and scraping the bottom on a regular basis .
    The meatballs can be fried in the original wok or pan for 5-8 mins in 3 batches and set aside while the onions are cooking.

    At this point the onions will have reduced to about 1/3 of their size. turn the heat right down. Add the powdered spices and mix well into the onions. Sizzle very gently for2-3 mins and add the tin of chopped tomatoes and use the liquid to deglaze any spices stuck to the bottom. Add chopped tomatoes raise heat to medium and cook for another 5 mins. Scrape the bottom with a wooden spatula if stuff starts to stick.

    Put this paste and passatta and half the stock or water into a cassarole dish or dutch oven. Bring to the boil and add the meatballs. If it needs thinning at this stage add the rest of the water. If it needs thickening add a dollop of tomato puree or a handful of lentils.
    Simmer for 20 - 30mins.

    Just before plating add 2 tsp of garam masala stir and serve with rice
    Mix chopped coriander and 1/2 tsp garam masala with a few dollops of yogurt in a bowl. Spoon over curry at the table.

    Footnote.
    It's a long process but the end result is worth it all. I normally put the lid on when it's done and eat it the next day. Chillies or chilli powder to be used at your own discretion. I normally use Tesco birds eye red chillies or green ones from the asian shop.
