Anyone ever done a data access request to a bank ? I'm wondering if I will get every statement they sent me since the inception of all my accounts.

The bank are required to give you all the information they have. As far as I know, they are required to keep a minimum of 6 years worth of transaction records

However, they aren't required to give it to you a particular format. They could just as easily give you a spreadsheet with a list of all your transactions, instead of official statements. What they choose to do will depend on the bank
