Does anybody know of a place in Dublin that would slice a Jamon and vacuum pack it for me? Spanish butchers offer the service, not sure whether they have special machines or hand carve it, but for me its a pita carving it.

To get Serrano at the required thinness, nothing beats hand carved. Otherwise you just end up wasting it as a deli slicer is never sharp enough

When I visited Granada some of the tapas places served it in small chunks; which I liked, being a fan of jamons of all kind.
