    It's completely inappropriate to call a dish unique to a particular URBAN location as peasant food.

    My mammy used to put lambs kidney in her coddle but probably because my da (non-dub) would have asked for it specially. So to us kids, that's what coddle always was. I loved that watery, fatty broth to dip buttered sliced bread into.
