Fishing? What age group are you thinking? Or maybe poker?

Perhaps snooker or pool for those with walking sticks.

Archery could be possible, but it depends on how much they need the walking stick.

Tag rugby would be an option, but you may need the chairs with the slanted wheels to enable sharp turns.

First suggestion would be to ask the people concerned what they want to do, and even to ask do they actually want to go on outings as a group, or just do their own thing.

As above, ask what they want to do.
Once that's done there are plenty of museums and galleries around the city.
Plenty of parks with rest areas, some lovely canal walks too that are punctuated with places to eat and well paved paths alongside.

Hi folks, sorry for delay in replying. We all have different degrees of multiple sclerosis so tiredness is a big problem for us so nothing too physical.
Have asked for suggestions from group and reply was for more of outings like Botanical Gardens, Saturday matinees in theatres etc. We are looking into galleries and museums. They have to have parking for some and be near Luas or Bus for others. Many thanks for the suggestions.
