Homemade fresh pasta

    Hi, I was thinking of trying to make my own fresh pasta, as far as method it seems pretty straight forward although I don't have a pasta machine. Is it necessary to have one? Also does it need to 'dry' out before you use it, I vaguely remember seeing pasta being hung before cooking, although that could have been a dream! Any advice would be great

    You don't need a pasta machine unless you're in the market for uniformity (or have weak arms). Rolling pasta with a rolling pin is pretty traditional, or you can pinch off lumps of the dough for little weird ear pastas. Drying is only really needed if you want to store it.

    I do rest it for an hour or so after making the dough before rolling, so it's less elastic. And I don't bother looking for particular flours. Cheap plain flour gives you greyish but tasty dough, odlums cream flour gives more regular colour and is also very tasty.
