Is it legal to work 10 days in a row (i.e Wednesday to Friday) with some the biggest rest period between them shifts being 18hrs?

It's complicated but not illegal

Yes totally legal.

Caveat:
rest periods have to be 11 hours or more.

there are also exemptions: you didnt say what job you do but if you work split shifts they dont have to be 11 hours.
