Irish Tapas ideas for a theme night

    How fancy are you getting with it? Hot or cold?


    We have ooodles of irish cheeses, meats, bread and seafood. All componants of great tapas.

    A plate of irish cheeses with relish or chutneys

    Black pudding on a crisp pastry with a blob of cheese on top

    Slices of baked ham with mustards

    Some of heddermans hot chilli smoked salmon, or smoked mackeral with herbs. Either of those, maybe on thinly sliced soda, or with crackers.

    Pots of mussels, hot scallops with a crispy bit of bacon on top, oysters.... Too far?


    Whatever you do, pick two or maybe three and do them well. Too many and it gets too difficult to manage.

    - Bacon & cabbage croquettes - Make a thick béchamel, add some chopped bacon, cabbage & parsley. Allow to cool completely. Use a spoon to form small ovals, roll in fine breadcrumbs (the kind that comes in a tub/packet), deep fry for a few minutes until golden.
    - Cocktail sausages. (mirroring chorizo)

    More of a dip - but I love freshly made hummous with strips of toasted pittas / strong bread.

    Wow, this country has come a long way from cocktail sticks with cheese & grapes!

    Slices of spiced beef curled around a piece of cheese (gubbeen or kileens ) on buttered soda bread - a bit of relish too... use a cocktail stock to hold it all together..
    Crozier blue and pear on a decent cracker..
    Soft goats cheese sandwiched between two slices of aubergine and baked (maybe with a bit of tapenade as well )
