Back on topic: I saw that the new coffee shop in the old Tourist office by Arthurs Quay is opening until 9pm each night, so that's something. Now, put your money where your mouth is if you want it to stay open.

The Nook down at the Milkmarket, across from the Office bar, is a lovely coffee shop/wine bar that also serves tapas, stays open until 1am most nights afaik. Certainly worth a visit.
The Buttery is another spot, that wouldn't be as nice and intimate, but often even have live music in the late evenings.
The Copper room is a wine and cheese spot, a bit more expencive, but again, a very nice spot.
The stormy teacup used to stay open until 10pm, but it wasn't sustainable sadly.

Majana is often quite busy most nights of the week, it's a restaurant mostly, but has all that Shisha pipe craic going on as well, and usually has a couple of people seated outside even late.

I think the problem has already been highlighted, Limerick is just way bigger than galway, and everything is quite spread out, even on culture night most years, the town wouldn't be super crowded, simply because things are spread so far apart. The auld crowds and night life will pick up again now in any case, with tens of thousands of students moving back in this week.
