Loan from parents question

    Hello,
My partner and I are looking to buy a house next year.
My parents (who are Spanish and living in Spain) have offered to lend us some money towards the mortgage, even though we already have the deposit in savings.
This would be a loan and not a gift so we were wondering what are the documents required for this, what kind of proof does the bank/revenue require about this loan.
We were wondering if we can write down the loan terms ourselves, would this need to be signed by a solicitor? Also because my parents are Spanish, would they need to fly over to sign the papers in front of a solicitor or is it something I can sort out when I'm over myself?
    Thanks
