Small fruit trees ... you can Bonsai anything? if so why get miniature/grafted tree?

I want fruit trees Pear and Plum Is it necessary to get grafted trees if I intend to keep them pruned every year? Or will I end up with a fat stumped tree if I choose just any tree ... Also what Plum and Pear is self fertile please ... Thanks
