Jesus Christ Joe using 8 eggs for a 2 person omelette - Raph is right I use 2 eggs when making myself an omelette and 3 maybe 4 for 2 people

As for flipping it i flip it over onto one half and then turn each side - it's one of the most simple foods you can make
