Artichoke hearts in water - give me some inspirational please!

I bought a tin of artichoke hearts in water fro My Tesco on a whim.
I love artichokes on a pizza, on an antipasti plate etc but have no inspiration as to what to do with them when they're not basted in oil/flavourings/smothered under a layer of cheese.
I'd like to make something vegan/plant based if possible.
If anyone has any experience with canned artichokes, I'd love to hear

Little bit of effort required to caramelize the onions but it's worth it. I usually make up a little bit of honey and mustard dressing for the leaves too, but as the recipe says you can just use whatever dressing you like.

I put them in tortellini salad with olives, sweet corn, Parma ham, cheese, and a red wine vinegrette (when I'm not just eating them with a fork)

While that does sound nice it's a ridiculously long post on making a sandwich out of shop bought ingredients.

I have a bit of a problem with a lot of these American "recipes".

Edit: it's a good idea as per the OP.
I'm not criticising anyone for posting the link.

Dear lord, that's worse than most recipe posts, though there is a definite trend toward giving long-winded descriptions of what they got up to that made them so hungry, anecdotes about their chickens or, as in this case, pure waffle.

However, my biggest complaint by far about American recipes is the tendency to call a recipe 'from scratch chicken pie' and for the ingredient list to read "Pre-bought pie shell, Rotisserie chicken, tin of condensed mushroom soup".

I agree completely. Her TV show is the same, it can be hard to watch at times, you just want her to shut up and cook. She does have some amazing recipes though. At least on the site there's a bit at the side where you can click down for the basic instructions.

Obviously not vegan, but this recipe suggests roasting them with a spatchcocked chicken, which I thought was interesting.

I only ever use canned artichoke hearts in one way: in a Gourmet Veg Pie (courtesy of Rose Elliot)
Vegetarian, but not vegan, because of butter & cream, but you get the idea:

puff pastry,
1 onion, Butter, 12 oz potatoes, diced (raw)
4 oz button mushrooms
1lb fresh asparagus, cut into 1 inch lengths
15 oz can artichoke hearts, drained
5 fl oz double cream, tbsp parsley, nutmeg, salt pepper

saute onions & potatoes in butter, covered with lid. for 10-15 mins.
add mushrooms, saute for another 3-4 mins
add asparagus, (leave the soft tips until later)
add artichokes, cream & parsley and heat through
add softer asparagus tips near the end, before covering with puff pastry
200C for 25-30 mins
