Check out Audax Ireland > http://www.audaxireland.org/ Plenty of events throughout the year, ranging from 200Km to 1200Km with the 2100 WAW audax every 4 years.

ride 50k in each county in ireland over 3 days about twice as long as M2M.... would take a bit of planning but do able?

How about the Wild Atlantic Way 555 ultra challenge in June next year. You can enter as a solo, two, four or eight person team. Basically 555kms around the coastline of Donegal non stop and includes 6200m of climbing and some are very tough climbs (Mamore, Horn Head, Glengesh, Slieve League, etc) Tough going as a solo challenge but getting gradually easier the more people on the team.
