Lancashire hotpot recipe - I tried this and its mmmm

    * After browning the lamb in butter set aside the melted butter

    Some of the comments below it give variations to add herbs etc.

    I think it needs some salt / pepper

    But aside from that it was really good.

    Did you use the kidneys as well? Are they easy to track down? Are they necessary? I'm a bit creeped out by offal at the best of times - do they give the final dish a mad bang of not-lamb?

    Any butchers should have kidneys, common enough to find.

    Just make sure you get lamb kidneys. Beef kidneys are a whole other, massive, kettle of fish

    I've eaten a lot of Lancashire hotpot in my time and have never had kidneys in it. I'd just leave them out.
