Pre dough shelf life?

    Made a predough for Holzfallerbrot on Thursday night with a view to baking on Friday. Mixed rye flour, water, sesame seeds, poppy, sunflower together. Recipe said to leave overnight.

    Few things popped up between now and then and didnt get a chance to bake it. Is the predough still useful tomorrow morning or should I dump it? There is no yeast used in predough.

    Should be fine. I bake a lot of bread and have been guilty of leaving predoughs and starters for much longer than planned. As lomg as it doesn't smell unpleasant it will be grand.
