I edited my bank statements on MS Paint to remove the gambling transactions to help my claim for a loan. I don't know if this is illegal or just very, very bold. I felt like your man from Catch Me If You Can when I was doing it though. One part of me is slightly proud actually because it's flawless.

I had an atm do this on me once. It gave out 20s as 10s or double notes - was a good few years ago now. You had to get 40 or 80 out and you got double. Got about €260 in free notes out in a day. Wish I'd had more in the account. Anyway I was a bit dubious so stuck the free money in an envelope to see if any repercussions arose and popped it on the bookshelf. Forgot about it for a while then bout 2-3 months later stumbled across the envelope with a whoop whoop. Bank never claimed it back. Free money. Did I break a law? Probably, but feck it got away with it.
Oh and the MOTOR TAX thing. I'm always late with it.

I forgot to tax my car and was driving around for nearly a whole week before I realised the tax disc was expired. Taxed it online and was super paranoid doing the school run for the days I was waiting for the new disc in the post.
