Capitol Bar cocktail

Hi i was in the capitol bar last weekend and i noticed they squeeze some sort of paste into the frozen cocktails just before they blend it, Does anybody know what this ingredient is?

Mostly sugar, colouring and flavouring.

It would be puree, they would have different types. Their cocktails aren't the best quality to be honest.
