Favourite quick healthy meal

    Made prawn linguine last night in less than 10 mins and it was delicious.

    Olive oil, butter, white wine, garlic, chilli, parsley, lemon juice, prawns with salt and pepper into a non stick pan and boil your linguine. Literally cooks in 8 mins.

    Questions about the health factor over the butter but other than that it seems like a good meal.

    Scrambled eggs on brown toast. 5 mins

    Pea soup ( frozen peas and onions) 5 mins

    Smoked fish dinner- peel and chop potato, boil, chop onion, add to potato, chop cauliflower , add to saucepan, drain off water add milk and smoked fish and knob of butter . 10 to 15 mins

    The 5 minute dinner series on youtube by the Happy Pears guys are really tasty and well take a little over 5 minutes to make for us mere mortals. Quite cheap and healthy. Very good if you can get by their enthusiasm.

    Pesto chicken:

    3 large chicken breasts, throw some peas, broccoli etc in wok and stir fry (2-3 squeezes of spray oil) then mix in a couple of good spoonfuls of pesto; gawgess!
    Serves well with rice or wedges
