I've seen oak wall panels that I like and they were described as bleeched white oak. If I bought oak veneered wall panels is there someone, or some company, that I could bring them too that would bleech them to get the colour I want?

I think you are referring to Limed Oak - a common finishing technique. It leaves the oak with a washed out whitish look. Just buy a tin of Liming wax by Liberon and follow instructions.

From what I have read bleaching and using lime are two different techniques to lighten the appearance of wood. Either way, if any suggestions of someone or some company that could do this for me would be really helpful.

Like anything, the first time you do it yourself it will not be perfect, whereas someone who has done this many times will produce a far superior result.

See here for info on bleaching
