Try CH marine. https://www.chmarine.com/acatalog/inboard-engine-replacement-parts.html. get an impeller kit also worth doing while you have the leg off, also check the nonreturn flaps in the exhaust they look like the heal of a shoe and can often break off and block it.

After speaking to a few marine mechanics I am getting differing opinions on weather to use adhesive at all, some have said I am better off without it as it is less likely to slip off, this was off a well know marine mechanic in the south east. I also got advice from a mercruiser dealer to use spray adhesive for carpets and material. I'm now very confused about what to do?

Go with the Quicksilver bellows glue it's made for the job and only cost about €10 it would be hard to tell if the carpet glue will hold up under water and I wouldn't want to be the one to find out if it works or not  do one side first and let it set then do the other side that should help with it slipping off also make sure you have your clamps facing the right way so they are handy to tighten up, the exhaust bellows might have a small hole in it make sure that is facing down so it can drain.

Try looking for 3M weatherstrip adhesive should do the job. Marine parts have on their web page. https://marineparts.ie/engine-parts/mercruiser/sterndrives/u-joint-and-exhaust-bellows/adhesive-bellow/
