Looking for a butcher with dry aging room

    Around Christmas I read about a craft butcher in (I think) North Dublin which has dry aging rooms and dry ages both lamb and beef. It went on the "bucket list"...only for me to completely forget the name. If anyone can help me out or point me to another similar butcher that would be wonderful

    +1 All in view of the public, it really is some set up they have. Not cheap though.

    Im pretty sure Corrigan's in Drumcondra have a dry aged beef press.
    Not as big as the butcher in Sutton I'm sure.

    The Village Butcher in Ranelagh also has a small aging room.

    I think Ennis’ in Rialto might do too
