The ac/ac adaptor from my water softener needs replacing. I'm confused about what route I should order. I've attached a photo of the existing one. Should I be getting a 12v 1 amp?

Yes, 12V 1 amp AC output will be fine, as long as the output is equal to or greater than 650 mA which is 0.65A. It won't matter if the one you buy can handle 100-240V input or just 220-240V like the old one. Just make sure that the output is AC and that it has the same connection - I assume a cylindrical jack to go into the appliance.
